Confoco knows that ingredients suitable for inclusion in bakery products must be bake stable, enabling them to maintain their shape, flavour and texture at high temperatures.

As with the food industry in general, the bakery sector is coming under increasing pressure to produce healthier products. With the focus on reducing fat, salt and sugar content, Confoco has developed high fruit inclusions which add natural sweetness or act as fat replacers.

Confoco was instrumental in the introduction of vitamin C rich acerola powder into bread making, where it can be used as an alternative to ascorbic acid as a dough enhancer. Acerola can be declared as a natural additive as opposed to an E number.

Confoco's ingredients include a complete of berries with high fruit contents, bake stable fruit pieces, high fibre date morsels and our real dairy chips. Our wide selection of apple dices, slices and rings offer versatile inclusions for bakes and cakes.

X-TREME FRUIT® Juice Bites are a perfect way of introducing fruit flavours into bakery applications. The pieces are uniform in size, with a smooth texture and deliver an intense burst of real fruit flavour. Prepared with real fruit, these functional fruit pieces are available in a wide variety of fruits, they are bake stable and were specially designed as inclusions for cereal bars, cookies and muffins.
 
Fruit puree pieces are also suitable for baking; they are 100% fruit and are available in a variety of flavours and sizes.
 
Drum dried flakes and powders are an ideal way of adding natural fruit sugars as well as boosting the fruit content of bakery products, cream fillings and toppings.
 
Date powder not only adds essential fibre and gives a sweet caramelised flavour, but can be used as a fat replacer in most bakery applications.
 
Our intermediate and high moisture apple dices, slices, rings and pie wedges have been specifically created as convenient ingredients for traditional apple based cakes and desserts.
 
Trogreen™ banana flour can be used as a substitute for wheat flour in gluten free products or for those who suffer from Coeliac disease.
